Nutrition is very important for anyone suffering from Celiac disease.  The longer you went undiagnosed, the more nutrient deficient you will have become.  Also many of the Gluten Free products, like breads, are missing the available nutrients provided by gluten… which is a protein, so the more you know. the better you can feel.
