GLUTEN

What is Gluten?

Gluten is found in wheat (including bulghur, durum, semolina, spelt, kamut, einkorn and faro) as well as rye, barley and triticale.  It is a protein composite, combining the proteins glutenin and gliadin (in wheat), secalin (in rye) and hordein (in barley).  These are in the prolamin family known as elastic proteins and they are found in the endosperm of the seeds in the grass family (see Whole Grains ).
